I believe the Genie gesture recognizer that used to be in Squeak could 
have per-Morph dictionaries so you could control the entire UI with a 
stylus or touchscreen.

Entering characters would be a case of making a suitable gesture 
dictionary for TextMorphs et al for something like Graffiti.
