https://jitsi.support/developer/advanced-jitsi-recording/ seems to gather
some answers. Not sure if it is up to date.

If I remember correctly 8x8.com owns Jitsi, and they provide Jitsi as a
service.

I also remember attending meetings in https://bigbluebutton.org/ It was
similar to Jitsi.
